Plant Based Creamy Italian Pasta
Plant based creamy Italian pasta has a meaty element and creamy texture using clean and healthy ingredients that will make you so excited to eat this dish.
Ingredients
- 1 Italian sausage recipe linked in blog post
- 1 zucchini, diced
- 1 tomato, diced
- 3 cups vegetable broth
- 1 8oz container cashew cream cheese
- 1/4 tsp. dried thyme
- 2 Tb corn starch
- salt and pepper to taste
- 8 oz box of pasta cooked per package instructions
Instructions
- Make sausage and saute on the stove. Add zucchini and lightly brown.
- While zucchini is cooking, make the sauce by adding the broth, cream cheese, thyme, and cornstarch to a blender.
- Pour the sauce in the large pot with the sausage and zucchini.
- After the sauce thickens (takes about 5 minutes) add the chopped tomato and cooked pasta.
