Blueberry Pancake Muffins

Five ingredients come together quickly to make the easiest and tastiest bites your family will love! It's a fluffy blueberry pancake in a classic muffin shape, bursting with fresh summer blueberry flavor in every bite. The absolute best of both worlds!
Serving Size 12 muffins

Ingredients

  • 2 cups pancake mix
  • 1/4 cup coconut sugar
  • 1 1/2 cups milk, any kind
  • 1 cup fresh or frozen blueberries
  • 2 eggs

Instructions

  • Preheat oven to 350 degrees. Line a muffin pan with muffin cups.
  • In a mixing bowl, whisk the pancake mix, coconut sugar, milk, and eggs together until smooth.
  • Add blueberries and stir to combine.
  • Use a cookie scoop or 1/4 cup measuring cup to fill the muffin cups 3/4 of the way full.
  • Bake for 22-25 minutes, or until slightly browned on top and firm to the touch.
  • Let the muffins cool for 10 minutes before removing them from the muffin pan.
