Caramelized Onion Quiche

Ingredients
Pie Crust

All-purpose flour

Italian seasoning, dried herbs

Olive oil

Very Cold water
Pinch of salt
Quiche Filling

Onion, sliced

Chopped spinach or kale

Feta cheese crumbles

Eggs

Milk

Tomato slices to garnish (optional)

Chives or other fresh herbs
Instructions
Pre-heat oven to 350 degrees.
In a medium skillet, heat 1 Tbsp olive oil or butter. Add sliced onions and cook on medium heat for about 5 minutes. Stir often so they don't burn.
Once the onions are caramelized, add the greens and let them cook until wilted. Turn the burner off to let this mixture cool.
In a medium-sized mixing bowl, stir the pie crust ingredients together. Form into a ball.
Place the dough ball into your pie dish and use your fingers to spread it all over the dish.
Pour the onions and greens into the pie dish and spread them out evenly.
Whisk the eggs, milk, salt and pepper together and pour over the onions and greens. Top evenly with feta cheese, tomatoes, and herbs.
Bake for 50-55 minutes, or until it's set in the middle.
