What’s In A Caramelized Onion Quiche?
A quiche is such a wonderfully classic yet versatile dish! You take a few basic ingredients like eggs, cheese, and milk, and bake them into something beautiful by adding delicious fillings. I love getting in my greens, so I always opt to throw a handful of green leafy vegetables into my quiche, and in this case, some fresh herbs too. But I discovered that by adding caramelized onions, this dish becomes next level. Don’t skip this part!
Browning onions in butter will break down the onions, releasing moisture and producing sweetness. The longer you caramelize, the jammier they get. You don’t need meat or extra ingredients to make this quiche stand out- the caramelized onions do that. Plus, onions are an incredibly cheap ingredient, so why not use them up!

Keys To A Perfectly Flaky Crust
The secret is in the crust! The keys to a delicious, flaky pie crust any time are twofold: use cold water and fat, and don’t over-handle the crust. This crust is so easy to make; I highly recommend making it instead of using a store-bought crust. Simply combine all the crust ingredients, form into a ball, and then spread it up and out into a pie plate with your fingers. My recipe works well for any savory pie, but you could also try my Sourdough pie crust which is gluten-friendly.

How To Make A Caramelized Onion Quiche
Once you have prepared your crust, it’s time to start assembling the rest of the ingredients. Add butter to a skillet and start sauteing your sliced onions. Cook these for at least 5 minutes, until they start to caramelize. Stir the onions around often so they don’t stick to the pan or become too burnt (you want them a little charred!) Then add in your chopped greens and stir until they’re wilted. Allow this mixture to cool.

When your onions and greens have cooled down, put them into the crust first. In a separate bowl, whisk your eggs, milk, salt, pepper, and feta cheese. Pour this mixture over the onions and greens.

Once your liquid has settled, you can arrange thin slices of tomatoes on top. The tomatoes add a nice acidity to the dish, but they also make it look pretty and colorful! Sprinkle a little more salt, herbs, or feta on top if you like. Now you are ready to bake!
Optional Fillings
One of the things I love about quiche, is switching up the fillings. Love mushrooms? Try adding sauteed mushrooms to the caramelized onions and herbs. Love cheese? Experiment with a variety of cheeses and decide which ones are your favorites (White cheddar, Swiss, Gruyere, and Parmesan are popular choices). Want to get in your veggies? Try adding broccoli or zucchini. Want a meatier version? Add what you like to boost the protein. You can literally never get bored with quiche- just mix it up!
How To Serve & Store
Cut the quiche into 8 wedges and serve hot. This pie is a great stand-alone, but could also be paired with a light salad or soup. Enjoy for breakfast, brunch, or any time of day. It’s an easy dish to bring a friend or share with a group, or even make for yourself (you’ll have leftovers!)
Store in the refrigerator up to 5 days, or freeze individual wedges up to 6 months. Bon Appetit!

Caramelized Onion Quiche
Ingredients
Pie Crust
- 1 cup All-purpose flour
- 1 tsp Italian seasoning, dried herbs
- 1/4 cup Olive oil
- 1/4 cup Very Cold water
- Pinch of salt
Quiche Filling
- 1 Onion, sliced
- 1 cup Chopped spinach or kale
- 1/2 cup Feta cheese crumbles
- 4 Eggs
- 1 cup Milk
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- Tomato slices to garnish (optional)
- 2 tbsp Chives or other fresh herbs
Instructions
- Pre-heat oven to 350 degrees.
- In a medium skillet, heat 1 Tbsp olive oil or butter. Add sliced onions and cook on medium heat for about 5 minutes. Stir often so they don't burn.
- Once the onions are caramelized, add the greens and let them cook until wilted. Turn the burner off to let this mixture cool.
- In a medium-sized mixing bowl, stir the pie crust ingredients together. Form into a ball.
- Place the dough ball into your pie dish and use your fingers to spread it all over the dish.
- Pour the onions and greens into the pie dish and spread them out evenly.
- Whisk the eggs, milk, salt and pepper together and pour over the onions and greens. Top evenly with feta cheese, tomatoes, and herbs.
- Bake for 50-55 minutes, or until it's set in the middle.
