Should I be eating white rice or brown rice?

A lot of people think brown rice is the healthier choice because it’s higher in fiber—but that’s not necessarily true. Brown rice contains more arsenic, a naturally occurring element found in soil and water that rice absorbs more than most other crops. It’s especially concentrated in the outer layers of the grain, which is why brown rice tends to have more arsenic than white.

But don’t worry—this isn’t a reason to panic or cut rice out of your life. People all over the world eat rice daily, including some of the healthiest cultures on the planet. We just need to be smart about it. Since white rice has less arsenic (thanks to the removed outer layer), that’s what we stick with in our home. We get our fiber from plenty of fruits and veggies instead—it’s all about balance!

Ways to lessen arsenic in rice

  • Always rinse the swirl the rice in water with your fingers, or a spoon to release any arsenic and additional starch.
  • Eat white rice more than brown rice.
  • Cook rice like pasta, and drain the water after cooking.
  • Choose rice that’s grown in California or India, which has been found to have less arsenic, and always purchase organic.

Warm rice cereal is comforting and soothing, with a creamy texture and a hint of spice from the cinnamon. Use leftover rice to make this satisfying meal on any budget. Want more protein? Add protein powder to the milk, then pour over the rice.
Serving Size 1 serving

Ingredients

  • 1 cup rice cooked
  • 2 tsp. pure maple syrup or honey
  • 1/4 tsp. cinnamon
  • milk

Instructions

  • Put rice in a bowl, and heat in the microwave for 1 minute (if it's cold). Or transfer rice to a skillet and heat with a pat of butter.
  • Add sweetener and cinnamon, and stir to combined.
  • Pour milk on top and enjoy!
