1wholechicken, cooked and debonedor Rotisserie chicken
1cupBBQ sauceor 1 cup of ketchup mixed with 3 Tbsp coconut sugar
1onion, diced
1red bell pepper, diced
1/2pineapple, dicedabout 2 cups
2cupsshredded cheeseWe use Kerrygold cheese, but mozzarella is good too
sprinkle of green onions
Instructions
Preheat the oven to 350 degrees and grease a 9x13 baking dish.
Debone the whole chicken and break it into small pieces to fill the bottom of the baking dish. Pour the BBQ sauce over the chicken and toss it all together.
In a large skillet, add 1 Tbsp olive oil and cook onions and bell peppers together until they are browned along the edges.
Top the chicken with the onions and peppers. Season with salt and pepper or steak seasoning.
Sprinkle the diced pineapple over the onions and peppers, then top it all with cheese.
Bake for 25-30 minutes, uncovered.
Drizzle a little more BBQ sauce over the top, then top with green onions.
Serve with fresh fruit and a salad.
Notes
Frozen or canned pineapple can be used, just be sure to drain very well.
