Serve up a festive, delicious, and healthy breakfast fruit pizza this St. Patrick's Day or Easter! Made with a gluten-free oatmeal cookie base, lathered with protein-rich Greek yogurt, and topped with rainbow fruit, it's the prettiest guilt-free breakfast or dessert around!
Preheat the oven to 350 degrees. Place a piece of parchment paper on a cookie sheet. Mine measures 12X16.
In a blender, blend the oats into a fine powder.
Whisk the oatmeal cookie ingredients together, then pour onto the cookie sheet.
Spread out the batter evenly.
Bake for 15 minutes. Let it cool completely, on a cookie drying rack, before building the pizza.
Make The Yogurt Filling
If you decide to use the yogurt recipe, whisk the ingredients together. You can skip that step and use any store-bought flavored Greek yogurt, but my homemade honey matcha version is my favorite.
Spread the yogurt evenly over the cooled oatmeal cookie base.
Top With Fruit
Decide how you want to design your pizza. Get creative and arrange the fruit in patterns throughout the pizza.
