Is Fruit Pizza Healthy?

You might be wondering, is a fruit pizza actually healthy? Generally speaking, NO. Fruit pizza ordered at a pizza restaurant consists of a floury, sugary base loaded with fruit compote, chocolate, and/or icing. Or it might also be a sugar cookie base, spread with thick frosting, and topped with fruit. This is NOT my fruit pizza! If you’ve ever wanted a healthier version of fruit pizza, allow me to win you over! Our healthy breakfast fruit pizza crust is gluten-free, made with organic oats, brown or coconut sugar, and milk. The “frosting” is Greek yogurt sweetened with a touch of honey, flaxseed, and matcha powder (a superfood). It’s topped with beautifully colorful, antioxidant-rich fruit. Every layer is intentionally crafted with high-quality ingredients, with your and my health in mind.

Best Fruit For Healthy Breakfast Fruit Pizza

When it comes to fruit for fruit pizza, keep it simple. It’s really up to your palette, but do try to incorporate as many different colors as you can. In-season fresh fruit is best! Frozen fruit has too much liquid and will make your fruit pizza mushy. Berries are a no-brainer; they’re easy to find year-round, packed with vitamins and antioxidants, and are so refreshing! Bananas and oranges are cheap and great options. Add some sliced kiwi, purple, red, or green grapes, or even melons. Remember, the more color you have, the better. Those rainbow fruits are a powerhouse of nutrients. Making this one of the reasons why this dish is so healthy!

Before you get started, check that you have parchment paper for baking your crust. I love using If You Care parchment paper. It’s non-toxic and perfect for all my baking needs.

If You Care, parchment paper 2-pack, available for purchase on Amazon.

What You’ll Need

  • Oats or oat flour
  • Greek Yogurt
  • Sugar: coconut or brown
  • Honey
  • Flaxseed (optional)
  • Matcha powder (optional)
  • Baking soda
  • Milk
  • Salt
  • Fruit: strawberries, blueberries, blackberries, bananas, oranges, kiwi, etc.

How To Make Healthy Fruit Pizza

Gather your ingredients, pre-heat your oven, line your baking sheet with parchment paper, and let’s get started!

Step One: The Cookie Crust

Blend your oats to create a fine oat flour. In a bowl, combine your dry ingredients: oats, sugar, salt, and baking powder. Add your milk and whisk well. Next, spread out the batter evenly onto the parchment paper.

Bake for 15 minutes and then allow to cool completely before adding the next layer. I place mine on a drying rack and remove the parchment paper easily.

Step Two: The Yogurt Filling

You can use any favorite store-bought brand of yogurt here and skip mixing your own. However, if you want to try something unique with amazing health benefits, make my Honey Matcha Greek Yogurt instead. Combine plain Greek yogurt, honey, matcha powder, and flaxseed. Whisk it all well and spread it over your cooled cookie base.

Step Three: Fruit Toppings

Grab your bounty of produce and slice away. Texturally, I think it’s nice when bananas, oranges, strawberries, and kiwis are sliced thinly. Now, here is the fun part: get creative! Arrange your fruit in any pattern you like. Create a rainbow for St. Patrick’s Day. Arrange pieces to make a bunny head and ears for Easter. Make a flag for Independence Day or Memorial Day. Play around with the design and see what you come up with.

Alternatively, you could even bake the crust on a round pizza pan and have a round crust to arrange differently. The design choices are up to you! This fun and festive dish is pleasing to adults and kids alike. Enjoy any holiday or just because!

Serve up a festive, delicious, and healthy breakfast fruit pizza this St. Patrick's Day or Easter! Made with a gluten-free oatmeal cookie base, lathered with protein-rich Greek yogurt, and topped with rainbow fruit, it's the prettiest guilt-free breakfast or dessert around!
Serving Size 20 slices

Ingredients

Breakfast Oatmeal Cookie

  • 3 cup oats ground into flour in a blender
  • 1/2 cup coconut sugar or brown sugar
  • 1/4 tsp baking soda
  • pinch of salt
  • 1 1/2 cup milk any kind

Filling

  • 1 cup Greek yogurt, plain
  • 2 Tbsp honey
  • 1 Tbsp ground flaxseed (optional)
  • 1/2 tsp matcha powder (optional)

Fruit Toppings

  • 1/2 cup sliced strawberries
  • 1 orange, sliced
  • 1 banana, sliced
  • 1/2 cup blueberries
  • 1/2 cup blackberries

Instructions

Make The Cookie Base

  • Preheat the oven to 350 degrees. Place a piece of parchment paper on a cookie sheet. Mine measures 12X16.
  • In a blender, blend the oats into a fine powder.
  • Whisk the oatmeal cookie ingredients together, then pour onto the cookie sheet.
  • Spread out the batter evenly.
  • Bake for 15 minutes. Let it cool completely, on a cookie drying rack, before building the pizza.

Make The Yogurt Filling

  • If you decide to use the yogurt recipe, whisk the ingredients together. You can skip that step and use any store-bought flavored Greek yogurt, but my homemade honey matcha version is my favorite.
  • Spread the yogurt evenly over the cooled oatmeal cookie base.

Top With Fruit

  • Decide how you want to design your pizza. Get creative and arrange the fruit in patterns throughout the pizza.

Notes

Use any combination of fruit, and have fun with your breakfast fruit pizza. This recipe can be used for any holiday breakfast celebration. Enjoy!
