This healthy sweet potato crisp is the comforting holiday dish you know and love, but it is intentionally created to be good for you, with no added sugar.
Make the base first. Bake the sweet potatoes until soft, then cool and mash well. Add cinnamon, vanilla extract, and a pinch of cinnamon and mix well. Spread evenly in a baking dish with a spatula.
Now, make the topping. Mix all ingredients in a bowl or food processor and combine until crumbly. You will be able to make clumps that stick together. Sprinkle clumps all over the base.
Bake at 375°F for 20-25 minutes. Allow to cool for a few minutes, then enjoy!
