Why I Make This Instead
If you’ve ever been through cancer, or are going through cancer, and have had to wonder what you can eat around the holidays, then YOU are why I created this dish! When I received my cancer diagnosis two years ago, it was right before Christmas. I remember the stress of wondering what I was going to eat, and being afraid that what I would eat might make the cancer worse. I had to overhaul my eating habits (yes, even around the holidays) and find alternatives that wouldn’t sabotage my healing. For me, that included cutting out refined sugars, harmful oils, and as much processed food as possible. Maybe you’re looking for healthy substitutes because of an illness or disease, or perhaps you want to improve your overall health. Either way, this dish is for you! I chose to create this dish because it is full of wholesome ingredients, comforting, and allows you to feel like you’re eating dessert.

Benefits of Sweet Potato Crisp
The star of this dish, of course, is the sweet potatoes! High in beta-carotene and Vitamin C, rich in antioxidants, and full of anti-inflammatory properties, sweet potatoes support your immune system. Sweet potatoes are low-glycemic carbs and a great source of fiber, both of which support gut health and portion control. The fiber will also help manage your blood sugar. Your heart will be happy because of better-regulated blood pressure, and bonus, the fiber can even aid in healthy weight management! In short, sweet potatoes are the perfect cancer-fighting food because they help protect your body from free radicals, which damage DNA and trigger inflammation. So if you’re bored of eating a plain old baked sweet potato, try this recipe for a fresh take on a healthy, anti-cancer super food!
Other honorable mentions are cinnamon, vanilla, and honey! Cinnamon helps to lower blood sugar and boost your metabolism. Raw honey has great antibacterial and anti-inflammatory properties. Pure vanilla sweetens slightly without causing inflammation or addiction, unlike refined sugar.

Making the Base
To prepare the base of my sweet potato crisp, start by baking two large sweet potatoes in the oven (my preferred method). Once baked, let the sweet potatoes cool. You can cook them the day before and allow them to cool overnight in the refrigerator. When you’re ready to bake, mash the sweet potatoes well. Sprinkle in cinnamon, vanilla, and a pinch of salt. Make sure everything is well combined, and then spread evenly in a baking pan with a spatula. Now, you’re ready to make the crisp topping.

Make the Topping
In a separate bowl or a food processor, combine the rolled oats, chopped walnuts, flaxseed, cinnamon, salt, and honey (optional) and mix well. Add a little coconut oil or grass-fed butter to bind it all together. Use your hands to help create clumps to drop all over the base.
I want to add that I prefer to use sprouted organic oats from Amazon, but Costco also sells them!

Now you’re ready to bake and enjoy soon! It will take about 20-25 minutes to cook, then allow to cool for about 5 minutes. Serve warm for the best effect! If you like, add a little dollop of yogurt on top!
