Can I use coleslaw mix instead of buying cabbage?

The short answer is yes, but it comes with a price. Store-bought bagged coleslaw mix is sprayed to keep it fresh longer, and pound for pound, you will pay more. The nice aspect is the convenience, so if you want to pay for convenience, then you can definitely use it in place of buying a fresh head of cabbage for turkey egg roll in a bowl.

Many people get hung up on fast food, because any time you think of those 2 words your mind immediately goes to a fast food restaurant. I like to think of produce as my fast food! How easy it is to simply cut an apple, slice a carrot, chop a head of cabbage for a quick fix meal. I love the convenience of fresh produce. Try to shift your thinking about convenience and simply cut the vegetables yourself.

Busy weeknight dinner strategy

There are several nights during the week when I need to get dinner on the table in 30 minutes or less. Asian food in general is super quick for me. I will simply pour rice into my rice cooker, add water, and start the cooking process. As the rice is cooking, I will most of the time throw together an Asian stir-fry, like turkey egg roll in a bowl.

Whether you choose to use ground turkey, beef, pork, or chicken, this meal can be diversified with a different meat choice and vegetables. The sauce recipe stays the same, but can be doubled or tripled. We enjoy a version of this meal at least once per week, and sometimes more.

Turkey Egg Roll In A Bowl

When weeknights get hectic, this turkey egg roll in a bowl is my go-to. It’s ready in just 10–15 minutes, and best of all, my kids can’t get enough of it!
Prep Time 10 minutes
Cook Time 10 minutes
Serving Size 6 servings

Ingredients

  • 1 pound ground turkey
  • 1 head of cabbage
  • 3-5 (2 cups) carrots, shredded
  • 2 tsp ginger, minced
  • 3 garlic cloves, minced

Sauce

  • 1/4 cup soy sauce
  • 1/4 cup pure maple syrup or honey
  • 1 tsp sesame oil
  • 2 Tbsp corn starch or arrowroot powder

Instructions

  • In a large skillet, brown the ground turkey.
  • When there's no longer any pink, add the cabbage, shredded carrots, ginger, and garlic.
  • While this cooks, whisk the sauce ingredients together.
  • Once the cabbage has gone down by half its size, which takes roughly 5 minutes, add the sauce mixture.
  • The sauce is really just enough to coat the cabbage mixture. It will thicken within a minute or 2.
  • Serve the turkey egg roll in a bowl over rice.
