What You’ll Need

  • Sweet Potatoes
  • Carrots
  • Onion
  • Ground Turkey
  • Garlic cloves
  • Worcestershire sauce
  • Golden Beet (or Apple)
  • Ketchup
  • Broccoli (or Broccolini)
  • Salt & Pepper

Root Vegetable Puree

Do this part of the meal first. If you love a comforting cold-season classic like mashed potatoes, you’re going to love this root vegetable version! My recipe calls for carrots, onions, sweet potatoes, garlic, and golden beets. But if you can’t find golden beets, don’t worry, you can sub an apple instead. The important thing is to use a variety of root vegetables for maximum benefits, like fiber.

To make the root vegetable puree, first rough chop your root vegetables. Next, put them in a baking dish and drizzle them with olive oil. You’re going to roast these in the oven until tender, then allow them to cool.

What Is The Best Way To Cook Ground Turkey?

You can simultaneously cook your broccoli (or broccolini) and ground turkey- that’s one of the benefits of this meal- it’s super quick! Steam your broccoli in one pan, and cook your ground turkey in a non-toxic skillet. Brown your meat with a little olive oil and drain off any excess fat. Don’t worry, we’re adding back flavor through the Worcestershire sauce, garlic, ketchup, and seasonings. Both of these components will come together in just about 10 minutes!

Ground Turkey & Broccoli Bowl with Root Vegetable Puree

A healthy, nutritious dinner chock full of veggies
Serving Size 6 servings

Ingredients

Root Vegetable Puree

  • 3 sweet potatoes, rough chopped (skin on for added fiber)
  • 4 carrots, rough chopped
  • 1/2 onion, rough chopped
  • 4 garlic cloves
  • 1 golden beet peeled, optional (or use apple with skin on)
  • olive oil (enough for drizzling)

Ground Turkey

  • 2 lbs ground turkey
  • 4 garlic cloves, minced
  • 2 tbsp worcestershire sauce
  • 2 tbsp ketchup
  • salt and pepper

Broccoli or Broccolini

  • 1 lb broccoli or broccolini, steamed

Instructions

  • Drizzle with olive oil, cover with foil, and roast in a 400-degree oven for 1 hour.
  • Let this cool before blending in a food processor or blender.
  • Saute or brown ground turkey. Drain excess fat. Add in garlic, worcestershire sauce, ketchup and seasonings and mix well.
  • Steam broccoli or broccolini for 10 minutes or until tender.
