Instant Pot Salmon and Brown Rice

The instant pot is not just for chicken and beef my friends, fish also cooks up beautifully in the Instant Pot! Tonight I wanted to try a new recipe, but I couldn’t find what I was looking for. So, I decided to get creative in the kitchen, and make up my own easy-peasy recipe!

 


I had 2 frozen salmon fillets in the freezer, and decided brown rice and peas would be a nice compliment to the fish. Oh, boy friends this is a tasty and CHEAP dish to create! Wild caught salmon does not have to be expensive, especially if you shop at Aldi’s. In their freezer section, they sell a 4pk of frozen wild caught salmon fillets for $3.97!!! What a bargain!

 

 

 

Side Notes:

If you want to be able to feed more than 4-5 people, here’s how you would switch it up, but the cooking time STAYS THE SAME!

  • 3 salmon fillets
  • 3 cups brown rice
  • 3 cups water
  • 2 cups frozen peas

Now you can easily feed 6-7 people! IF you do not like salmon, you can use FROZEN CHICKEN BREASTS, just make sure the breasts are on the smaller side.

Ingredients
  

  • 2 frozen salmon fillets
  • 2 cups brown rice uncooked
  • 2 cups water
  • 1 cup frozen peas
  • 1/2 onion, diced
  • 1 Tbsp. olive oil
  • 1/2 tsp. lemon pepper

Instructions
 

  • Turn the instant pot to SAUTE, and add the olive oil and onion. Cook for 5 minutes.
  • After the onion has started to brown a bit, turn off the instant pot. Then, add the brown rice, and stir to combine.
  • Place frozen salmon fillets on top of the brown rice.
  • Pour the water over the top of the brown rice, then season the tops of the salmon fillets with lemon pepper.
  • Secure the lid, make sure the valve is on "sealing," then set the instant pot to MANUAL for 20 minutes on high.
  • Once the timer goes off, let the instant pot rest for 10 minutes, then quick release.
  • Using a fork, break apart the salmon fillets into chunks, add frozen peas, then cover for 5 minutes.
  • Now it's time to mix it all together and serve!
  • Optional: drizzle a little soy sauce or coconut aminos on top for some added flavor.

    • Often I search for recipes based on time to put the meal together. This is a great recipe, but you need to line for total time for start to finish. Here is the breakdown for my Instant Pot. Begin by adding 5 minutes to get up to temp for sauté, then 20 minutes to get up to pressure for cooking, then add 10 minutes for step #6, and add 5 minutes for step 7. that’s an additional 40 minutes.
