The answer is YES, you absolutely can! Borrowing from a pancake mix serves as a convenient base, simplifies the ingredients, and shortens prep time. A basic mix that contains flour, leavening agents, sugar, and salt will work, but I prefer to use a high-quality, organic mix. Alternatively, you could make your own “pancake mix” with the ingredients mentioned above (see recipe notes below).
Our favorite way to serve 5-ingredient muffins from pancake mix is for lunch with apple slices or carrot sticks. The kids devour them! We often opt for a quick and satisfying meat and cheese-only muffin, but occasionally like to switch it up and add zucchini, mushrooms, peppers, tomatoes, etc.
Follow the steps below to create 5-Ingredient meat and cheese muffins from pancake mix
Begin by cooking your protein, shredding your cheese, and preheating your oven.
Next, in a large bowl, whisk your pancake mix, eggs, and milk.

Then, fold in the cooked meat and shredded cheese.

Now, line your muffin pan and fill each cup to the top (nobody wants a half-sized muffin)!

Finally, bake for 20-25 minutes until golden brown on top and firm to the touch. Cool slightly, but serve warm.

Ingredients
- 1/2 pound ground beef, cooked season with salt and pepper
- 1 cup shredded cheese We use Kerrygold brand
- 2 cups pancake mix
- 1 3/4 cups milk
- 2 eggs
(Optional) Additional Add-Ins
- 1 cup cooked vegetables diced: onion, tomatoes, zucchini, corn, olives, carrots, peas
- 1 tsp garlic powder
- 1/2 cup beans
- 1/4 cup avocado oil or melted butter (omit 1/4 cup milk)
Instructions
- Preheat oven to 375 degrees, and line a muffin pan with muffin cups.
- Cook ground beef or whatever protein you choose to use.
- Shred cheese. Freshly shredded cheese is best, as pre-shredded cheese contains food starch.
- In a bowl, whisk together pancake mix, milk, and eggs.
- Stir in meat and cheese.
- Fill muffin cups all the way to the top with batter. Fill all 12 cups totally full.
- Bake in the oven for 20-25 minutes, or until lightly golden brown on top, and firm to the touch.
- If serving for lunch, consider serving with apple slices and carrot sticks.
