Prepping chicken for the freezer
At the beginning of each month I go to Sam’s Club and purchase enough chicken to get us through the month. They have an organic local option that we love. I typically purchase 5-6 whole chickens and 3-4 packages of chicken breasts or thighs. Once I get the chicken home, I start cutting and preparing it for the freezer. Before freezing I like to add various marinades to jazz up our dinner options.
I keep a steady rotation of about 6 go-to marinades, and this orange-marinated chicken is hands-down one of our family’s favorites. My son and I created this recipe together—it’s our way of making the most of the 2 big Naval orange trees in our backyard. Chicken Orange Marinade
Ingredients
- ½ cup orange juice fresh or store-bought
- ¼ cup ketchup
- 2 Tbsp honey
- 1 Tbsp soy sauce
- 1 Tbsp Worcestershire sauce
- 1 Tbsp olive oil optional for richness
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- In a glass bowl whisk all ingredients together until smooth.
- Pour over chicken (or other meat) in a resealable bag or baking dish.
- Marinate the meat in the fridge for at least 30 minutes, but overnight is best.
- Grill, bake, or pan-cook as desired, but here’s what I do. I like to brown the chicken in a skillet first, then bake it in the oven at 400 degrees for 20 minutes.
