Prepping chicken for the freezer

At the beginning of each month I go to Sam’s Club and purchase enough chicken to get us through the month. They have an organic local option that we love. I typically purchase 5-6 whole chickens and 3-4 packages of chicken breasts or thighs. Once I get the chicken home, I start cutting and preparing it for the freezer. Before freezing I like to add various marinades to jazz up our dinner options.

Chicken Orange Marinade

Prep Time 5 minutes
Serving Size 1 cup

Ingredients

  • ½ cup orange juice fresh or store-bought
  • ¼ cup ketchup
  • 2 Tbsp honey
  • 1 Tbsp soy sauce
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp olive oil optional for richness
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • In a glass bowl whisk all ingredients together until smooth.
  • Pour over chicken (or other meat) in a resealable bag or baking dish.
  • Marinate the meat in the fridge for at least 30 minutes, but overnight is best.
  • Grill, bake, or pan-cook as desired, but here’s what I do. I like to brown the chicken in a skillet first, then bake it in the oven at 400 degrees for 20 minutes.
