Enchiladas might be my favorite food, but the heavy ingredients and high carbs didn’t feel like a good combination. So, I decided to ditch the tortillas and create a simple low-carb enchilada bake that I could still enjoy with my family. My husband loves the flavors, and that it doesn’t make you feel like you have a brick in your stomach. It’s light, flavorful, and super tasty!
You will love that this has only 3 ingredients- meat, cheese, and sauce! Weeknights call for simple, and this is just that. You can use store-bought enchilada sauce, but I HIGHLY recommend making my EASY Homemade Enchilada Sauce. You will love the flavor, and you probably already have all the ingredients. Another easy alternative is to buy enchilada sauce from your favorite Mexican restaurant!

Low-Carb Enchilada Bake
Ingredients
- shredded pork, chicken, or beef already cooked
- 1 recipe of enchilada sauce or store bought will work too
- 2 cups shredded cheese or more
Instructions
- Turn your oven on BROIL.
- In a 9X13 baking dish, in an even layer, spread out your shredded meat.
- Ladle your enchilada sauce over the meat. You can put on as little or as much as you’d like.
- Sprinkle the cheese on top.
- Place under the broiler until the cheese melts.
