4cupsdiced beets, skin peeled off(I purchase frozen from Azure Standard)
1-2Tbspolive oil
1Tbspgarlic and herb seasoning(or just salt and pepper)
Instructions
Preheat oven to 400 degrees.
If you are not using already prepared beets, peel and dice your beets. 4 cups of diced beets = roughly 5 medium-sized beets. You can adjust this recipe; it's so easy!
On a stainless steel cookie sheet, lay out the diced beets in a single layer.
Drizzle the top with olive oil, then sprinkle with your favorite seasoning blend.
Stir to coat each beet piece in oil and seasoning.
Bake for 30-40 minutes, or until the tops are lightly toasted. I even like a few burnt pieces.
Enjoy as a side dish or on top of a salad.
Remember: a serving size of beets per day is roughly the size of an apricot.
