Oven Roasted Beets
Beets are so healthy that I consume them every day, along with a carrot and an apple. These “ABC foods” are the cornerstone of my diet. To some, beets may be an acquired taste. I’ve found that by switching up the cooking method, I can enjoy beets in a variety of ways and not tire of eating them every day.

Beets can be boiled, roasted, pressure-cooked, juiced, pickled, or even eaten raw. Many times, I prefer to boil my beets, and then the skin peels off very naturally and easily. However, lately I’ve enjoyed oven-roasting diced beets to add to salads, or even to eat as a simple side dish with protein. One of the best “hacks” I’ve found lately is purchasing pre-diced frozen beets from Azure Standard- what a convenience!

How To Roast Beets Without Foil
I’m going to share how to roast beets in the oven using the safest, most non-toxic method: without foil. Ideally, use a stainless steel or non-toxic baking sheet.
First, preheat your oven to 400 degrees. If you are using fresh beets, wash, peel, and dice your beets- about two cups worth. Next, arrange your beets in a single layer on the baking dish. Drizzle with olive oil and seasoning, then stir to coat.

Then, bake for approximately 30-40 minutes or until the tops are browned and toasted (I enjoy a few crisp pieces!) Remove with a spatula and eat the beets warm if having them as a side dish, or allow them to cool slightly and use them as a topping to a salad. Store in an air-tight container in the fridge for 3 days or freeze for later use.

Roasted Beets Side Dish
Ingredients
- 4 cups diced beets, skin peeled off (I purchase frozen from Azure Standard)
- 1-2 Tbsp olive oil
- 1 Tbsp garlic and herb seasoning (or just salt and pepper)
Instructions
- Preheat oven to 400 degrees.
- If you are not using already prepared beets, peel and dice your beets. 4 cups of diced beets = roughly 5 medium-sized beets. You can adjust this recipe; it's so easy!
- On a stainless steel cookie sheet, lay out the diced beets in a single layer.
- Drizzle the top with olive oil, then sprinkle with your favorite seasoning blend.
- Stir to coat each beet piece in oil and seasoning.
- Bake for 30-40 minutes, or until the tops are lightly toasted. I even like a few burnt pieces.
- Enjoy as a side dish or on top of a salad.
- Remember: a serving size of beets per day is roughly the size of an apricot.
