Health Benefits of Apples, Beets, and Carrots
As you may know, I had a little journey with the Big C- that’s right, cancer. Since my diagnosis and subsequent recovery, I have been focusing on my health and the health of my family. One of the ways I care for and support my body since cancer is by feeding it nutritious, superpower foods. Three of these top “super foods” are beets, carrots, and apples. You’ve heard the adage, “An apple a day keeps the doctor away.” Well, I am here to tell you there is truth to that claim! Especially during cancer, and now as part of a cancer-prevention diet, my Mom and I eat one of each of these fruits & vegetables EVERY SINGLE DAY. Sometimes in raw form, sometimes cooked, and sometimes in juice.
Beets are deep red or sometimes golden root vegetables, rich in antioxidants. They’re known to boost energy, reduce inflammation, cleanse the blood and colon, build red blood cells, may help lower blood pressure and blood sugar, and support cardiovascular health. Carrots are also root vegetables, known most commonly for their bright orange color (but they also come in yellows and purples)! They’re rich in beta-carotene, improve vision, cleanse toxins, support the heart, lower the risk of diabetes, and may prevent cancer. Carrots are also great for your skin! (Note: eating a lot of carrots daily may give you an orangish tint) Apples are terrific immune boosters, support a healthy heart, lower the risk of diabetes, and are full of fiber and water. This can tremendously aid in healthy weight management.
Bottom Line of Benefits
Each of these ingredients alone is packed with essential vitamins, minerals, and nutrients. Alone, they are powerful enough, but together they’re even more potent! When combined, they work to boost your immune system, give you energy, help you feel full, and ward off your risk factors. They are three of the best anti-cancer foods around! There are even some bonus skin benefits. Your skin will adopt a healthy, natural “glow” if you consume these regularly.

What Are The Benefits Of Juicing?
As I mentioned, you can consume beets, carrots, and apples raw, boiled, roasted, etc. They’re obviously great in salads, but if you’re struggling to up your intake of fruits and veggies, then I recommend juicing! The method doesn’t really matter, as long as you eat them! However, I find that juicing is preferable for saving time, so that I have a healthy snack or meal on the go. It’s just a refreshing way to eat, or drink! Juice enters the bloodstream, allowing for rapid absorption and easy digestion. This allows the maximum amount of vitamins and minerals to get into your system quickly. One potential drawback is the loss of fiber from juicing. That’s why you may not want to consider this a “meal” but rather a snack, side, or supplement to your daily diet. But if it fills you up, great! Doesn’t get much healthier than this!
When I was going through cancer, I drank copious amounts of juice to get the freshest vegetables into my body; however, today I prefer to eat cooked beets, for example. I still love eating my veggies raw, but if you struggle with the taste of beets in particular, then juicing is a great way to take them. People who are averse to certain textures may also find that juicing is preferable.

Do Organic Ingredients Matter?
When you buy organic fruits and vegetables, you’re reducing your exposure to potential toxins from hazardous pesticides. If you can buy your produce organic at a Farmer’s Market or Health Food Store, that’s ideal, but you can also buy it at Walmart! Color also matters! Typically, when you’re looking at produce, the deeper the hue the better. That’s why I recommend red beets over golden beets. Carrots should be deep orange, but purple carrots offer great benefits too! Apples can be any variety you like. If you prefer a less sweet drink, opt for apples like Granny Smith, Envy, or Braeburn. Sweeten it up with a Gala, Sugarbee, or Honeycrisp apple.
How to Prep Ingredients for Juicing
The best thing about this simple juice recipe is the minimal prep! Fruit and Vegetable skin (or peel) has a tremendous amount of vitamins and minerals. It is up to you whether you leave the skin on or peel before juicing. It may also depend on your juicer. I recommend leaving the skins on carrots and apples for maximum effect, and it won’t change the taste! (This is also why you want organic- if you’re leaving the skins on for your juice.) Beet skin, while good for you, may leave an earthy flavor. Remove the peel easily before juicing, but still retain maximum benefits. Skin or no skin, give your produce a good wash, a rough chop, and you’re ready to juice!
The recipe below is for a single serving, but I’ve also included a modified serving size with more produce. You can make a large batch, just consume it within 24 hours for the best effect, or freeze it. When I make a big batch, I use Souper Cubes, which are my favorite way to store juice, broth, and soup in the freezer! If you want to jazz up your juice, consider optional add-ins like a dash of turmeric, fresh ginger, or chia seeds.

Which Juicer Works Best?
There are many juicers out on the market. I LOVE my Hurom H70 model, which was ranked “Best Juicer in 2024!” It’s generally considered the best on the market. It is an investment, but I believe it’s the “Goldilocks” of kitchen machines. It’s perfectly suited to your juicing needs, all while sitting unobtrusively on your countertop. It’s easy to clean, powerful, has very low pulp, and is easy to assemble and disassemble.

Freeze juice for later…
When my husband helps me make juice, we’ll juice 1 gallon. I will freeze the juice in Souper Cubes, and pull one out each day to thaw and enjoy. This is a great way to save me time, and I never have an excuse not to drink my apple, beet, carrot juice.
Souper Cubes are a great gift to give yourself. I use mine every week!
