Double Chocolate Snack Bars

Didn’t you know homemade breakfast bars are the new trend?!?! Well, they are in this house. My husband loves CLIFF bars, and even that is an understatement! Those bars can be pricey when you’re buying them weekly, so about a year ago I came up with my very own version of the famous snack bars and I’ve been making them ever since.

I hope you enjoy this recipe as much as my husband does, and they only cost about $2-3 max for 6-8 bars!

UPDATE (April 2019) I am now making these into snack bars. I developed a breakfast bar recipe that my husband loves even more. I cut these now into 8 bars and send them with my kids to school for snack. These are delicious and continue to be a big favorite!

Double Chocolate Snack Bars

Cook Time 20 minutes
Total Time 30 minutes
Serving Size 8 bars

Ingredients

  • 2 cups oats
  • 1/3 cup liquid sweetener agave, honey, pure maple syrup
  • 2 Tbsp. cocoa powder
  • 2 eggs or flax eggs
  • 2 bananas
  • 3 Tbsp. natural nut butter I use peanut butter
  • 1 tsp. vanilla extract
  • dash of salt
  • 1/2 cup chocolate chips or another add in of your choice

Instructions

  • Preheat oven to 350 degrees.
  • In a blender, add oats and grind into a flour.
  • Add the rest of the ingredients (minus the chocolate chips), and blend.
  • Next, add chocolate chips and mix with a spatula.
  • Pour into a greased 8X8 baking dish.
  • Bake for 20 minutes.
  • Let cool for 45 minutes, then cut into 6-8 bars.
  • Wrap individually in plastic wrap, and store in the fridge for up to 1 week.

Notes

***This is a thick batter. If yours is too thick, add a few tablespoons of milk and mix in.

  2. What a lifesaver!! I have a mom of 2 and usually do a pretty good job of meal planning/budgeting but this month I forgot about the half week!! We were all out of snacks. Luckily I had most of the ingredients for this recipe. What a hit! Instead of cocoa powder I used vanilla Protien powder, peanut butter chips instead of chocolate chips (we aren’t a chocolate loving family), and I added a teaspoon of cinnamon. Thank you so much for sharing this recipe!

    1. I can only speak for oat flour since I haven’t tried any other kind. All of those absorb liquid differently, so you might need to adjust the liquid.
