Easy Chicken Soup With Almond Flour Dumplings

Easy Gluten-Free Dumplings for Chicken Soup
I don’t think there’s anything more comforting than dumplings in chicken soup. I flat out love bread, and being gluten-free can make that difficult, but I developed this recipe about 4 years ago when I was grain-free and I really wanted dumplings.
Make your chicken and vegetable soup however you please, then make these dumplings. These dumplings are dense and filling. You will love them!

Easy Gluten-Free Dumplings for Chicken Soup
Ingredients
- 1 cup almond flour finely ground
- 1 cup tapioca starch
- 3 Tbsp. Parmesan cheese grated
- 3 eggs
- 3 Tbsp. milk
- 1 Tbsp. olive oil
- dash of salt
Instructions
- First make your soup however you'd like.
- Then, dump all of the ingredients into a blender.
- Blend for 1 minute to allow the eggs to build some air into the batter to create air bubbles, so let it whip for a bit.
- Next, drop spoonfuls of batter on top of your chicken soup until all the batter has been used, add a sprinkle of dried parsley on top of the dumplings (optional).
- Cook uncovered for 10 minutes, then cover your soup and cook dumplings for an additional 10 minutes.
