Easy Chickpea Salad Vegan
A cheap and easy chickpea salad that’s vegan is a great recipe to add to your recipe binder to keep on hand when you need an easy and cheap lunch idea.

Ingredients In Easy Chickpea Salad
- 1 can chickpeas, drained
- 1-2 Tbsp. Dijon mustard
- 1-2 Tbsp. tahini
- 1 Tbsp. dill relish
- 1/4 cup diced celery
- salt and pepper
Remember the fewer ingredients you add, the less this recipe will cost to make. This is my go-to recipe, but adding some other flavor options is fun too! You can easily turn this recipe into a chickpea Waldorf salad in no time.

Chickpea Salad With Tahini
This easy vegan chickpea salad is naturally very low in fat. Tuna salad naturally has a fatty element to it because of the natural fat in mayonnaise. That fatty element gives a creamy texture to the salad. Chickpea salad is naturally a healthier option, but to give a creamy texture to this recipe I really like to add tahini. Tahini is just sesame seed butter, like peanut butter. It’s very savory and sometimes bitter if you add too much.
I love just a touch of tahini to this dish and you can really tell a difference when you add it in. I’m not a fan of mayonnaise in general, and often times they have eggs in them. Tahini is a great vegan option and also budget friendly. I purchase tahini from Walmart in a squeeze tube. It makes adding it to this recipe so much easier and really quite effortless.
Chickpea Salad Is A Great Cheap Lunch Recipe – $1.00 or Less!
A can of chickpeas costs roughly $.50 per can, but can be even cheaper if you make your own cooked chickpeas from scratch! I buy my dry chickpeas from Azure Standard. It’s very easy to do and can be done in an Instant Pot. I soak the beans over night, rinse and drain. Add to your Instant Pot and cover with water. Cook on MANUAL high for 13 minutes. Let the pressure come down naturally and you have perfect chickpeas for any recipe. You can even freeze them for later.
In total this recipe will only cost you about $1.00 to make, or cheaper if you make your own cooked chickpeas! It’s easy, delicious, and can be made on a busy day without the hassle of keeping it refrigerated. If you’re in a hurry with no refrigerator, no problem! Enjoy this simple recipe!

Smashed Chickpea Salad Vegan
Ingredients
- 1 can garbanzo beans drained
- 1-2 Tbsp. honey dijon mustard
- 1-2 Tbsp. tahini
- 1 Tbsp. dill relish
- 1/4 cup diced celery
- salt and pepper to taste
Instructions
- In a mixing bowl, add cooked chickpeas, dijon mustard, tahini, relish, and salt and pepper.
- Use a potato masher and mash the chickpeas with the other ingredients until all the chickpeas have been broken up and at least half and totally mashed.
- Once the chickpeas are mashed to your liking, add the fresh element of this recipe the celery. Stir to combine.
- Add chickpea smash to rice crackers, fresh bread, or scoop onto a salad.
