My husband grabs a homemade pumpkin breakfast bar most mornings, whether on a weekday or the weekend. He loves them.
The taste and texture is very similar to a CLIFF bar, but they have a much fresher taste with fewer ingredients.

- 1 cup pumpkin puree
- 1/2 cup liquid sweetener: simple syrup, honey, maple syrup, agave nectar
- 2 eggs, or flax eggs work too for vegans
- 2 Tbsp. almond butter
- 1/2 Tbsp. pumpkin pie spice
- 1 tsp. cinnamon
- 1 tsp. vanilla extract
- 1/8 tsp. salt

How To Quickly Make Oatmeal Breakfast Bars
- Put all the ingredients together into ONE bowl.

The original breakfast bars recipe that I created is a chocolate version. Healthy breakfast bar recipes are very versatile and offer a lot of wiggle room with the ingredients. These are chocolate flavored with bananas and peanut butter. You’ll have to give these a try too.

These are super good! I put both pecans and chocolate chips in mine and swapped the normal eggs for flaxseed eggs and it worked pretty well! I should have cooked them just a bit longer, but that’s on me. Thank you for the great recipe! 🙂
How can I substitute the liquid sweetener for trivia (powder form)?
I meant to say Truvia not trivia.
I would make a simple syrup. So take the amount of liquid sweetener and dissolve the truvia in water or milk, then add it to the recipe.
This looks so good! What a great breakfast meal prep during the fall!
Thanks for sharing! Does it keep long?
Yes, they will keep in the fridge for 5 days, or in the freezer for 2 months.
