When I’m craving a pumpkin-y dessert, this is my go-to. I love that this treat is something my kids genuinely enjoy, but what makes me love it even more is knowing that every delicious bite is giving their growing bodies so many amazing health benefits. That means so much to me as a mom. Here are just some of the benefits of my simple pumpkin chia pudding:

  • Chia Seeds: High in Omega-3s; high fiber; reduce inflammation
  • Honey: High in antioxidants; antimicrobial; cancer-fighting properties
  • Pure Pumpkin: High in vitamins A & C; packed with beta-carotene; supports skin and eye health

Optimize health benefits by using organic Pumpkin puree in a BPA-free can when possible. Raw, unfiltered honey is wonderful too, especially if you can purchase it from your local farmers’ market.

A note on Soy: while any milk will work for this recipe, I regularly drink organic soy milk for cancer prevention. Studies show that soy intake may improve overall survival and reduce recurrence rates for certain types of cancers. I prefer Trader Joe’s Organic Unsweetened Soy Milk!

Pumpkin Chia Pudding Recipe

This quick-set chia pudding recipe takes less than 10 minutes to prep! Gather your ingredients, and whisk it up in no time. Perfect for an afternoon snack or a quick dessert to have on hand during the week. It’s also a great make-ahead breakfast recipe if you want to prepare the night before a busy school morning.

First, pour your chia seeds and milk into a bowl. Now give it a good whisk.

Next, you’ll add the pumpkin puree, honey, and spices. Mix well until everything is incorporated.

Using spices, honey, pumpkin, chia seeds and milk, Aimee from Homemaker on a Budget creates a delicious and healthy fall dessert: pumpkin chia seed pudding.

At this point, you can leave it in the bowl or scoop out the pudding into smaller portions. Refrigerate for at least 30 minutes to 1 hour to set. Once thickened, it should have a nice, thick, creamy pudding consistency.

Pumpkin Chia Seed Pudding

Creamy and packed with flavor, this 5-ingredient pumpkin chia pudding recipe delivers all the nostalgic holiday flavors without the guilt!
Serving Size 3 servings

Ingredients

  • 1/4 cup chia seeds
  • 3/4 cup milk, any kind
  • 1/2 cup pumpkin puree
  • 2 tbsp raw unfiltered honey
  • 1 tsp pumpkin pie spice cinnamon optional
  • pumpkin seeds optional

Instructions

  • Whisk together chia seeds and milk in a bowl.
  • Next, add pumpkin puree, honey, and spices. Whisk well again.
  • Refrigerate for at least 30 minutes to an hour to thicken.
  • Top with pumpkin seeds if desired.

Notes

You can easily double this recipe by using the entire can of pumpkin puree and doubling the remaining ingredients.
