  • Almond Butter
  • Pumpkin Pie Spice
  • Pure Maple Syrup or Honey
  • Quick Oats
  • Pumpkin Puree
  • Flaxseed Meal
  • Chia Seeds
  • Vanilla Extract
  • Chocolate Chips or Chopped Dark Chocolate

How to Choose Ingredients

Whenever possible, I recommend buying ingredients in bulk, to have ample pantry staples that don’t expire too quickly, and to cut down on costs. For maximum health benefits, it’s ideal to buy Organic products if available. In this recipe, go for organic oats, organic pumpkin, and organic dark chocolate. As for the rest of the ingredients, if you have the option to buy the real/whole 1-ingredient item, DO IT (example- go for pure vanilla as opposed to imitation vanilla, or buy pure maple syrup instead of a pancake syrup loaded with artificial ingredients). Your taste buds, and your body will thank you!

Step by Step Instructions

  1. Grab your ingredients and a large bowl for mixing. You’re going to start by mixing the wet ingredients: pumpkin purée, maple syrup, almond butter, vanilla.
  2. Add pumpkin pie spice, chia seeds and flaxseed together. Mix well and don’t forget to savor the warm aroma of the pumpkin pie spice as it permeates throughout your kitchen!

3. Then fold in the oats and chocolate. Mix until everything is incorporated. Refrigerate for 1 hour.

4. Roll into balls, using a cookie scoop or a large spoon.

5. Store in the refrigerator up to 7 days. These will freeze well too. You can make a double batch and enjoy one now, and freeze the other for a busy day later!

Ingredients

  • 1 cup almond butter
  • 1/2 cup pumpkin purée
  • 1/2 cup honey or maple syrup
  • 1/2 cup flaxseed meal
  • 1 Tbsp chia seeds
  • 1 tsp vanilla
  • 1 1/2 tsp pumpkin pie spice
  • 1 1/2 cups quick oats
  • 1/2 cup chocolate chips or chopped extra dark chocolate

Instructions

  • Mix the first 7 ingredients together, then add the oats and chocolate. Mix well.
  • Refrigerate for 1 hour, then roll into balls. I use a small cookie scoop to keep the size of the bites uniform.
  • Store in the refrigerator up to 7 days. They freeze well, too!
