Muffins Made with Pancake Mix
Can you make muffins with pancake mix? A resounding YES!
This is a fun and easy muffin recipe we love to make, especially when I need to throw something together in a pinch. Just like my 5-Ingredient Meat and Cheese Muffins from Pancake Mix, these 5-Ingredient blueberry muffins from pancake mix come together so quickly. Whether it’s a busy school morning or a slow summer afternoon, this is a great kid-friendly recipe that little hands love to help with. The pancake mix eliminates the need for extra measuring and ingredients, and it’s something we all have in our pantries!

The Best Muffin Pans and Liners
After I beat cancer, I ditched all silicone and toxic metal baking sheets, pans, and cookware. Now, I use non-toxic stainless steel or glass for everything from homemade bread to muffins. The heavy-duty, oven and dishwasher-safe muffin pan is a great alternative to aluminum or Teflon. The unbleached liners are fantastic.

How To Make Blueberry Muffins with Pancake Mix
First, preheat your oven and line a muffin tin with baking cups. Then, in a large mixing bowl, you will whisk the pancake mix, coconut sugar, milk, and eggs until smooth.

Next, fold in the blueberries and stir until just combined. Do not overmix.

Use a cookie scoop or a 1/4 measuring cup to fill the muffin liners 3/4 of the way full. Do not overfill.

Bake the muffins for 22-25 minutes, or until golden brown on top and firm to the touch. Finally, allow them to cool for at least 10 minutes before removing them from the pan. This allows the muffins to firm up and the blueberries (which will be hot) to cool down.

These muffins are not overly sweet, which is how we like them. I serve them with real grass-fed butter and jam, or sometimes “pancake-style” with butter and syrup. They freeze well, too! Enjoy them for breakfast, an afternoon snack, or pack them into a school lunchbox.

Blueberry Pancake Muffins
Ingredients
- 2 cups pancake mix
- 1/4 cup coconut sugar
- 1 1/2 cups milk, any kind
- 1 cup fresh or frozen blueberries
- 2 eggs
Instructions
- Preheat oven to 350 degrees. Line a muffin pan with muffin cups.
- In a mixing bowl, whisk the pancake mix, coconut sugar, milk, and eggs together until smooth.
- Add blueberries and stir to combine.
- Use a cookie scoop or 1/4 cup measuring cup to fill the muffin cups 3/4 of the way full.
- Bake for 22-25 minutes, or until slightly browned on top and firm to the touch.
- Let the muffins cool for 10 minutes before removing them from the muffin pan.
