Healthy Black Bean Brownies (Vegan & Gluten-Free)
Ingredients
- 1 can black beans drained and rinsed
- 1/2 cup nut butter peanut butter or almond butter
- 1/2 cup pure maple syrup
- 1/4 cup cocoa powder
- 1/4 cup almond flour or oat flour
- 1 Tbsp neutral oil avocado, coconut, or olive oil
- 1 Tbsp apple cider vinegar
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 1 cup chocolate chips
Instructions
- Preheat oven to 350°F. Lightly grease an 8 x 8 glass pan, set aside.
- In the base of a food processor, place the beans and pulse 5 or 6 times until well chopped.
- Add the rest of the ingredients, minus the chocolate chips. Process until creamy and smooth. Occasionally scrape down the sides as needed.
- Remove the lid and add chocolate chips. Pour into the prepared baking dish and spread it out evenly. Top with sprinkles or chopped nuts, optional.
- Bake for 30 minutes or until toothpick and inserted comes out clean.
