Simple Homemade Meatballs
Since my recipe is so simple, the quality of the ingredients matters! Start with organic, all-natural grass-fed beef or ground turkey if possible. The few remaining ingredients (eggs, oats, ketchup, pickles, and seasoning) are in stock in most households. From start to finish, about 45 minutes, you can literally make simple, dairy-free, gluten-free meatballs any time!

Are Meatballs Gluten-Free
Traditional meatballs are made using breadcrumbs, which contain gluten. My recipe uses oats in place of breadcrumbs because oats are naturally gluten-free. You can use any brand or type of oats, but if you’re concerned about cross-contamination, look for the label “Certified Gluten-Free.”
Substituting oats for breadcrumbs does NOT compromise the texture or taste. So do not fear, you will still get all that great flavor and juiciness from the seasonings and the beef. Gluten-free meatballs are always a hit in our house! Bonus: they’re dairy-free too.
Even if you’re not technically gluten-free, you can still enjoy these meatballs!

Ensure your oven is preheated. Then, add all of the ingredients into the same bowl and mix well. You can use a spatula or your hands. It’s okay to get messy with this part- just be sure to wash your hands!

Next, form 1-inch meatballs either with a spoon or a small cookie scoop. Try not to squeeze too hard, as this will leave your meat tough and dry. Gently press and form into a ball shape.

After this, drop the balls onto a cookie or baking sheet. Spread them out so that they’re at least 1 inch apart. You should easily be able to place 24 small meatballs on a sheet.

Bake for 30 minutes or until the meatballs are brown. It is not necessary to flip the meatballs over halfway through, but that is an option.

Finally, meatballs will be brown, with a little crispiness on the outside, but nice and juicy inside. The gluten-free meatballs are ready to eat, add to your meal, or store for later!
Add simple, gluten-free meatballs to your favorite pasta sauce, throw them into an Italian soup, or pack them in a school lunch. We like them in Beef Stroganoff, on Meatball Subs, or as appetizers dipped in our favorite sauce. These also freeze well for later use.

Simple Gluten-Free Meatballs
Ingredients
- 2 pound ground beef or ground turkey
- 1 egg
- 1/4 cup quick oats
- 2 Tbsp pickle juice
- 2 Tbsp. ketchup
- 2 tsp. garlic powder
- 1 tsp. salt and pepper
Instructions
- Preheat oven to 400 degrees.
- Mix all ingredients together in a large bowl and form into 1-inch meatballs. I like to use a 1-inch cookie scoop. Do not squeeze the mixture in your hands unless you want a hard meatball. Keep the meatballs light and airy by using gentle pressure when forming the balls.
- Place meatballs on a cookie sheet. I can easily fit 24 meatballs per cookie sheet.
- Bake for 30 minutes or until golden brown. I don't ever turn the meatballs half way through, but you can if you'd like.
- These meatballs can be frozen for later use or tossed in your favorite sauce for an appetizer. They are also delicious in meatball subs or used in beef stroganoff.
